Ingredients
Drippings from your roasted turkey
½ cup flour
2 cups chicken or turkey broth
½ - ¾ cup white wine
Salt & pepper, to taste
Instructions
Step 1
Prepare the Roux
Place the roasting pan with the turkey drippings on the stove over medium-high heat. Bring the drippings to a slow boil. Sprinkle the flour evenly over the drippings, and whisk continuously to incorporate the flour, creating a smooth roux.
Step 2
Add Wine
Once the flour is fully absorbed, pour in the white wine, whisking as you go. Continue whisking until the mixture reaches a boil again. It’s normal for it to look a bit lumpy at this stage.
Step 3
Incorporate Broth
When the mixture is bubbling and begins to thicken, add 1 cup of the broth and whisk to combine. Bring it back to a boil, allowing the gravy to thicken again. Add more broth, a little at a time, until the gravy reaches your desired consistency. For a smooth, pourable gravy, use all the broth.
Step 4
Strain for Smoothness
Pour the gravy through a sieve into another pot, pushing any lumps or bits of flour through with the whisk. Repeat this step once or twice to ensure a smooth texture, if needed.
Step 5
Season and Serve
Bring the gravy to a final boil, then adjust seasoning with salt and pepper to taste. Serve warm.
