I absolutely adore gnocchi, and you’ll be pleased to know that it is surprisingly simple to make. While traditional gnocchi may not be particularly unhealthy, this version offers a more wholesome alternative. The best part? You can freeze them, and when the craving strikes, simply boil for a few minutes — delightfully fresh and ready in no time at all.

Ingredients
1 ⅓ cups cooked sweet potato (2-3 large)
⅔ cup flour
⅓ teaspoon salt
Instructions
Step 1
Preheat your oven to 425 °F (220 ºC).
Step 2
Microwave the sweet potatoes for about 8 minutes until softened. For an added depth of flavor, place them in the oven for an additional 5-10 minutes—this step is optional, but highly recommended.
Step 3
Once cooked, allow the sweet potatoes to cool slightly. Scoop out the flesh and measure
1 ⅓ cups, discarding the skins.
Step 4
In a medium bowl, mash the sweet potatoes with a fork until smooth. Transfer the mashed sweet potatoes to a larger mixing bowl, then add the flour and salt. Gently knead the mixture just until the ingredients are combined—be careful not to overwork the dough, as this can result in tougher gnocchi.
Step 5
Dust a flat surface with flour. Turn the dough out onto the surface. If the dough feels sticky, you may add a touch more flour, but take care not to add too much, as this can affect the gnocchi’s flavor and texture.

Step 6
Bring a large pot of water to a boil. Using a large pot is essential to prevent the gnocchi from sticking together during cooking.
Step 7
Divide the dough into four equal portions. Roll each portion into a long rope, about 1 inch in diameter. Slice the ropes into 1-inch pieces.

For a traditional look, gently press each gnocchi with a fork. If the fork sticks, dust it lightly with flour.
Step 8
Once your gnocchis are shaped and the water is boiling, cook the gnocchi in batches. They will rise to the surface when done, at which point you should remove them immediately.
Step 9
Serve your gnocchi with marinara sauce, and for a fresh touch, you can toss in some spinach.
