Snow Ball cookies are a delicious creation and a classic. And, a perfect addition to your holiday cookie collection. This recipe creates this incredibly light and soft cookie. And of course It is nutty and covered in powdered sugar!

Ingredients
1 ½ cups pecans
2 cups all purpose flour
¼ teaspoon salt
1 cup (2 sticks) butter, room temperature
2 tablespoons icing sugar
1 tablespoon cold water
2 teaspoons vanilla extract
1 ½ cups additional icing sugar for coating and dusting the cookies
Instructions
Step 1
In a food processor fitted with the blade attachment chop the pecans and then add the flour ½ cup at a time. Pulse until just combined.
Step 2
In a stand mixer fitted with the paddle attachment, cream the softened butter until light and fluffy. Add the icing sugar, cold water, and vanilla extract. Mix until smooth and fully combined.
Step 3
Reduce the mixer speed to low and gradually add the pecan-flour mixture in three parts. Mix until just combined. Scrape down the sides of the bowl to ensure all ingredients are fully incorporated.
Step 4
Cover the dough with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the dough to firm up.
Step 5
Preheat your oven to 325°F (163°C). Line a baking sheet with parchment paper.
Note: It's best to bake these cookies one sheet at a time to ensure even baking. |
Step 6
Take the chilled dough and roll it into 1½ inch balls. Place 16-20 balls (depending on the size of your baking sheet) onto the parchment-lined sheet, spacing them evenly.
Step 7
Bake the cookies in the preheated oven for 20-22 minutes, or until the bottoms are lightly golden brown. These cookies are delicate, so handle with care when transferring them.
Step 8
While the cookies are still warm to the touch (but not hot), roll each one in the 1 ½ cups of icing sugar. Return the cookies to the cooling rack. Let the sugar absorb into the cookies before rolling them a second time. After the second coating, sift the remaining icing sugar over the cookies for a final dusting.
Step 9
Allow the cookies to cool completely and let the icing sugar “set” before serving. As tempting as it may be, don’t skip this step—it makes all the difference in the texture and flavor of the cookies.
