Prep Time: 20 | Total Time: 2h 30mins | Serves: 14-16
Ingredients
For the Ham
1 bone-in spiral ham, 8-10 lbs
1/4 cup pineapple juice
1/4 cup fresh orange juice
1/4 cup Dijon mustard
1/4 cup honey
1 cup brown sugar
2 tablespoons apple cider vinegar
2 tablespoons unsalted butter
1 tablespoon soy sauce
1 tablespoon fresh rosemary, finely chopped
1 teaspoon cinnamon
1/4 cup teaspoon cloves
1/2 teaspoon black pepper
For the Caramelized Pineapple Topping (Optional)
1 small pineapple, cut into rings or wedges, canned works perfectly as well
2 tablespoons butter
2 tablespoons brown sugar
1 tablespoon honey
1 teaspoon fresh rosemary, chopped
Instructions
Step 1
Preheat your oven to 325°F (165°C). Place the spiral ham in a large roasting pan, cut side down.
Step 2
In a saucepan over medium heat, combine pineapple juice, orange juice, Dijon mustard, honey, brown sugar, apple cider vinegar, butter, soy sauce, rosemary, cinnamon, cloves, and black pepper. Let it simmer for 5-7 minutes until slightly thickened.
Step 3
Brush a generous layer of glaze over the ham, making sure to get it between the slices. Cover the ham loosely with foil and bake for 1½ hours, basting every 30 minutes with more glaze.
Step 4
While the ham is roasting, heat a pan over medium heat. Melt butter, then add brown sugar, honey, and rosemary. Stir to combine, then add the pineapple slices. Cook for 3-4 minutes per side until golden and caramelized.
Step 5
Uncover the ham, baste with the remaining glaze, and roast for an additional 20 minutes to develop a deep caramelized crust.
Step 6
Remove from the oven and let the ham rest for 10 minutes before slicing. Arrange the caramelized pineapple on top and serve warm.
