There's something wonderfully satisfying about a well-composed salad, and this quinoa chickpea salad with avocado lime dressing is no exception. This salad is also perfect for meal prepping.

Ingredients
For Baked Chickpeas
400g caned chickpeas, drained and rinsed
1 tsp paprika
1/4 tsp cayenne, optional
2 tsp garlic salt
For Dressing
1 avocado
1/4 cup greek yogurt
1 tsp garlic salt
juice of 1-2 limes
few grinds of black pepper
1 tsp olive oil
1/2 cups water
For Salad
1 cup quinoa
handful of cherry tomatoes, chopped
1/2 cup cucumbers
handful of arugula
Instructions
Step 1
Prepare a baking sheet lined with parchment paper. Drain and rinse the chickpeas. Place in a small bowl and add paprika and 2 tsp garlic salt. Mix and bake at 350ºF for 20 mins until slightly crispy.
Step 2
In a pot of water cook the quinoa according to the instructions.
Step 3
Once the chickpeas are done, take them out and set aside.
Step 4
Make the dressing by blending all the ingredients together, until smooth.
Step 5
Chop the tomatoes and cucumber. In a bowl or in 2 storage containers add a handful of arugula, the tomatoes, cucumber, and chickpeas. Evenly divide the quinoa between the 2 storage containers or add half to your bowl. You can top with the dressing or you can serve it on the side.
