Ingredients
1 fresh ripe pineapple, peeled, cored, and blended, about 4 cups
2 cups sugar
2 tablespoons lemon juice
1 teaspoon vanilla extract, optional
Instructions
Step 1
Blend the pineapple in a blender or food processor until smooth.
Step 2
In a large pot, combine the blended pineapple, sugar, and lemon juice.
Bring the mixture to a boil over medium heat, stirring occasionally.
Step 3
Reduce the heat and simmer for about 25-30 minutes, stirring frequently, until the jam thickens.
Step 4
If desired, stir in vanilla extract during the last 5 minutes of cooking.
Remove from heat and let the jam cool slightly before transferring it to sterilized jars. Seal tightly. Let the jam cool completely before storing it in the refrigerator. It will last up to 2 weeks.
