This delightful monkey bread is a fun, shareable dessert that’s as easy as it is delicious. Made with just two simple ingredients—Greek yogurt and flour—the dough is light and subtly tangy, thanks to the yogurt. It adds a boost of protein while balancing the sweetness. For an extra touch, try adding bananas or applesauce to naturally sweeten the dough.
When incorporating mashed banana or applesauce into the classic two-ingredient dough, it’s important to adjust the ratios to ensure the dough doesn’t become too sticky. The added moisture from the fruit requires a bit more flour for balance. Here’s how to make those adjustments:
Banana-Enhanced Dough
To create a dough with the delicate sweetness of banana, follow these proportions:
2 cups self-rising flour
1 1/4 cups Greek yogurt
1/4 cup mashed ripe banana (approximately 1 small banana)
1/4 to 1/3 cup additional self-rising flour, as needed, to adjust for the extra moisture
Applesauce-Enhanced Dough
For a subtle apple flavor, use the following ingredients:
2 cups self-rising flour
1 1/4 cups Greek yogurt
1/4 cup unsweetened applesauce
1/4 to 1/3 cup additional self-rising flour to maintain the ideal dough consistency
Prep Time: 20 mins | Total Time: 1 hour 20 mins | Serves: 10
Ingredients
2 cups flour
1 ½ greek yogurt
½ cup granulated sugar
3 tablespoons cinnamon
cooking spray
1 cup powdered sugar
1-2 tablespoons of water
1 teaspoon vanilla extract
Instructions
Step 1
Preheat the oven to 375 ºF degrees (190 ºC).
Step 2
In a small bowl mix together the sugar and the cinnamon until the cinnamon is fully incorporated. Set aside.
Step 3
Spray a small bundt or loaf pan with cooking spray and sprinkle with cinnamon sugar.
Step 4
In a large bowl mix the flour and yogurt together. Once combined, flour the surface of a large cutting board and knead the dough. This dough can be sticky but with a floured hand the dough should be ready to handle.
Step 5
Once the dough is kneaded, flour the surface and a rolling pin and roll until the dough is about an inch thick.
Step 6
Using a small round 1 inch cookie cutter, cut circles from the dough. With floured hands roll each piece of dough into balls and then roll them in the cinnamon sugar. Between each layer of dough sprinkle extra cinnamon sugar to create that cravable ooey gooey texture.
Step 7
Arrange the balls in the pan stacking them until the pan is full.
Step 8
Bake for an 1 hour.
Step 9
When the monkey bread is done, remove it from the oven and allow it to cool for 5-10 minutes. Using oven mitts, carefully flip the pan onto a platter or large cutting board to release the monkey bread. Be sure to tap the bottom of the pan gently to ensure all the pieces come out cleanly. If you’re planning to save it for later, store it in an airtight container in the refrigerator for up to five days. For those eager to dig in right away, whisk together the powdered sugar, water (adjusting for your desired consistency), and vanilla extract, then drizzle it over the top before serving.
