Ingredients
one stick (1/2 cup) vegan butter, softened (I used @earthbalance)
1/4 cup coconut sugar
1 egg
1 teaspoon vanilla
2 cups almond flour
1/2 teaspoon baking soda
pinch of salt
2/3 cup dried cranberries
2/3 cup mini white chocolate chips (if you prefer more white chocolate you may add extra).
Instructions
Step 1
Line a sheet pan with parchment paper and preheat the oven to 350ºF (176 ºC).
Step 2
Cream together the butter and coconut sugar until smooth. Add in the egg and vanilla. Mix in the rest of the ingredients except for the cranberries and chocolate.
Step 3
Next, mix in the cranberries and chocolate. Form into balls and flatten onto a parchment lined pan.
Step 4
Bake for 10-13 min or until golden brown!
