Green Goddess Gazpacho

This Green Goddess Gazpacho is a delightful blend of lightness, heartiness, and refreshing flavors, making it the perfect choice for spring or hot summer days. The addition of avocado creates a silky, creamy texture that elevates the soup. Not only is this gazpacho a wonderful meal, but it also serves beautifully as an elegant appetizer!

Ingredients


  • 1 cucumber


  • 1 avocado


  • ½ lime


  • 2 pinches salt


  • small handful arugula


  • mint leaves or basil


  • ice cubes


  • cold water


  • 50ml olive oil


Instructions


Step 1


On a cutting board roughly chop cucumber (with skin) and avocado.


Step 2


In a blender add cucumber, avocado, arugula and mint. Add the ice cubes, cold water, and salt, blend until smooth.


Step 3


While blending, pour in the olive oil. This will help the smooth creamy texture develop.


Step 4


If you feel it needs more salt or lime, adjust the flavor.


Step 5


Pour into your blow of choice and enjoy or put into the fridge until chilled.
