Prep Time: 20 mins | Total Time: 45 mins | Serves: 6

Ingredients

For the base

  • 1 sheet frozen puff pastry (thawed according to package instructions)

For the topping mix ("Schmand")

  • ¼ cup crème fraîche

  • ¼ cup sour cream

Other toppings

  • 1 large red onion, thinly sliced

  • 1 tablespoon olive oil

  • ¾ cup lardons or diced pancetta

  • 6 goat cheese rounds

  • 1/2 cup Emmentaler cheese, grated

Instructions

Step 1

Heat the oven to 200°C (400°F). Place a pizza stone or baking sheet inside to preheat.

Step 2

Heat the olive oil in a skillet over medium heat. Add the red onion slices and cook, stirring occasionally, for about 20-25 minutes until they become soft and golden brown. Set aside.

Step 3

In the same skillet, fry the lardons or diced pancetta until crispy. Drain on a plate lined with paper towels.

Step 4

Lightly roll out the thawed puff pastry sheet to smooth out any creases, keeping a rectangular shape. Place the puff pastry on a sheet of parchment paper for easy handling.

Step 5

Mix the crème fraîche and sour cream together to make your "Schmand." Spread it evenly over the puff pastry, leaving a 1 inch border around the edges. Top with the caramelized onions, crispy lardons, crumbled goat cheese, and grated Emmentaler.

Step 6

Carefully transfer the puff pastry (on the parchment paper) to the preheated pizza stone or baking sheet. Bake for 15-20 minutes, or until the pastry is golden and puffed, and the cheese is bubbly and lightly browned.
