Cucumber Ginger Fizz

Ingredients


  • 1/2 - 1 teaspoon ginger


  • 1 large cucumber

  • 1/4 cup simple syrup, or 1 cup sugar, 1 cup water

  • mint leaves

  • 1 lime

  • sparkling water

  • 1 cup water



Instructions


Step 1

Blend the cucumber chunks, mint leaves, and 1/2 cup of water until smooth. If you have a juicer, you can use that instead. Strain the mixture to remove pulp and divide the juice between 2 glasses.


Step 2

Grate the ginger (about 2 teaspoons) and add it to the cucumber-mint juice. Squeeze the juice of 2 limes into the mix and stir well.


Step 3

If you’d like extra sweetness, stir in 1/4 cup of simple syrup (or sugar dissolved in water).


Step 4

Top each glass with sparkling water and stir gently to combine.
