Creamed Spinach

Ingredients


  • 3 bags chopped frozen organic spinach (10 oz each)

  • 2 cups shredded Gruyere cheese, divided

  • ½ cup grated Parmesan cheese

  • 2 onions, finely chopped

  • 1 teaspoon olive oil

  • 2 tablespoons butter or butter substitute (e.g., Earth Balance)

  • 1 cup milk (nonfat or whole)


  • ¼ cup flour


Instructions


Step 1


Preheat your oven to 425°F (220°C).


Step 2


Empty the spinach into a large colander and allow it to thaw. Squeeze out as much moisture as possible. (For quicker thawing, rinse with hot water and squeeze thoroughly.) Set aside.


Step 3


Heat olive oil and butter in a large pan over medium heat. Add chopped onions and cook until golden, about 5-7 minutes. Stir in the flour with a whisk, combining thoroughly until the mixture absorbs the oil and butter.

Step 4


Gradually raise the heat and whisk in the milk slowly to avoid lumps. Cook, whisking continuously, until the mixture thickens and boils, about 2 minutes. Stir in Parmesan cheese and 1 cup of Gruyere until melted and smooth.


Step 5


Fold the spinach into the sauce and mix until well combined. Transfer the mixture to a baking dish and sprinkle the remaining 1 cup of Gruyere over the top.


Step 6


Bake in the preheated oven for 30-40 minutes, or until the cheese is golden and bubbling.
